Eggplant & Mince Meat Curry Stir-Fry

You can make this quick stir-fry in just 10 minutes. It goes well with rice and makes a side dish that's almost like dry curry.

Ingredients: 4 servings

Eggplant - small Japanese type
Mixed ground beef and pork
80-100 g
●Curry powder
1 tablespoon
2 tablespoons
2 tablespoons
to taste
to taste
Vegetable oil
as needed


1. Cut the eggplant into 1 cm thick pieces (either cubes or semi-circles), soak the pieces in water, and drain well.
2. Dice the onion, but not too finely.
3. Stir-fry the eggplant and onion in some vegetable oil.
4. Once the vegetables start to cook through, add the meat, and cook that too.
5. When the meat has cooked through and is dry and crumbly, stir in the ● ingredients, and continue to stir-fry.
6. Season the stir-fry with salt and pepper.
7. Now serve it up.
