Easy Cold Ramen Noodles with Somen Noodles

Just mixing the ingredients makes an amazing soup in no time! I tweaked the "Dan-dan" noodle soup recipe. Equal parts milk and mentsuyu (Japanese noodle dipping sauce) plus a bit ra-yu chili oil makes the dish tasty!

Ingredients: 1 serving

Somen noodles
1 bunch
★Mentsuyu (diluted)
100 ml
★Cold milk
100 ml
★Ra-yu (or sesame oil)
a few drops
Thinly sliced cucmber
optional
Boiled egg
optional
Nori seaweed
optional

Steps

1. Boil the somen noodles.
2. In the meantime, mix the ★ ingredients in a bowl, and make soup.
3. Rinse the freshly cooked somen noodles under cold running water, and add into the soup.
4. Add cucumber, boiled egg, and nori seaweed, etc., as toppings if you like.

Story Behind this Recipe

I turned dan dan noodle soup into a ramen dish.
Some people who have tried this dish asked me if I made tonkotsu (pork base) soup. Some people asked me if I used sesame paste because it's flavourful and delicious.
Whenever I tell them that I used milk, mentsuyu, and ra-yu, they always seem surprised, but they never fail to finish the soup.
