Perfect When the Weather's Hot! Spicy Chilled Miso Soup

It's easy and delicious! This is a hiyajiru (cold soup) you can slurp up with a "grown-up" flavor.

Ingredients: 1 serving

Cucumber (thinly sliced)
1/2
Cherry tomatoes (quartered)

Canned tuna
40 g
Plain cooked rice
200 ml
Toasted white sesame seeds and salt
a small amount
Sesame oil
1 teaspoon
For the soup:
Bonito dashi stock
200 ml
Miso
1 teaspoon
Doubanjiang
1/3 teaspoon

Steps

1. Heat the dashi stock in a pan. Dissolve the miso and doubanjiang. Transfer to a container and chill in the refrigerator.
2. Sprinkle cucumber slices with a little salt and leave for 10 minutes. Squeeze out tightly. Combine with the tuna.
3. Put rice in a bowl and pour the chilled soup over it. Add the cherry tomatoes plus the cucumber-tuna mix from Step 2, and sprinkle sesame seeds. Drizzle sesame oil to finish.
