Leek and Mayonnaise Chicken

This is perfect even in summer. This is a fantastic chicken dish made with sake. It has a taste that everyone in my family loves.

Ingredients: 4 servings

Chicken thighs
★Soy sauce
1 tablespoon
1 tablespoon
as needed
2 tablespoons
◎Soy sauce
2 tablespoons
2 tablespoons
1 rounded tablespoon
to taste
Japanese leek (green onions)
a small amount


1. Pierce holes in the skin of the chicken thighs with a fork.
2. Cut the thighs in half, then rub them with the seasoning ingredients (marked with ★). Allow the chicken to sit for 15 minutes.
3. Coat the chicken with katakuriko, then fry in a generous amount of oil.
4. Once the chicken is cooked through, get rid of any excess oil. Add the seasoning ingredients marked with ◎ and allow the flavours to meld with the chicken.
5. Cut the chicken into bite-sized pieces, and top with mayonnaise and chopped leek. It's finished!
