Healthy Japanese-Style Potato Salad Without Mayonnaise For Bento

This is a healthy potato salad that can be prepared in under 3 minutes (plus 5 minutes in the microwave) without a knife.

Ingredients: 3 servings

Potatoes (new potatoes if you have them)
2 medium (250 g)
Shio-konbu (I use low-sodium)
1 tablespoon
2 teaspoons
☆Milk (soy milk)
3 tablespoons
Mix together:
1 scant teaspoon
*Milk (soy milk)
1 tablespoon
To finish:
Ground sesame seeds


1. Heat the potatoes whole in the microwave for 5 minutes at 600 W. If you want to peel the potatoes, you can do it after warming them. I like to eat the skins though.
2. Add the * ingredients to a plastic bag and completely combine the ingredients while rubbing them together I find this to be the quickest and most effective method for mixing.
3. Once the potato is soft enough to be pierced all the way through with a fork, mash them ♪ While they're still hot, add the ☆ vinegar and ☆ milk and mix.
4. Add the miso mixture from Step 2 into the potato mixture from Step 3 and combine well Mix in plenty of ground sesame seeds and season with salt and pepper to finish.

Story Behind this Recipe

I ran out of rice to put in my son's bento box so whipped up some potato salad (without mayo!) to fill it out.
I remembered a macrobiotic recipe for mayo and rushed to make some but I was told it was tasty enough without.
I make my potato salad with non-flavoured soy milk and it tastes delicious.
