Grapefruit Salad With Balsamic Vinegar

Tomatoes, kiwis, and grapefruit with an easy balsamic vinegar dressing make a refreshing summer salad!

Ingredients: 2 servings

Tomato

Kiwi
1
Grapefruit
1/2
Olive oil
1 tablespoon
Balsamic vinegar
1 1/2 tablespoons
Honey
1/2 tablespoon
Black pepper
to taste
Mesclun greens or other choice of greens
as needed

Steps

1. Cut the grapefruit in half and use a spoon to scoop out the fruit. Squeeze out the juice, too. Cut the tomato and kiwi into bite-sized pieces.
2. Combine the olive oil, balsamic vinegar, and honey in a bowl.
3. Toss Step 1 and Step 2 together.
4. Place a bed of the greens on a plate and top with the mixture. Sprinkle with black pepper to taste and serve.
