Spaghetti Genovese with Prawn, Avocado & Cheese

A dish packed with plump prawns. The fresh and green avocado makes for a great combination with the seafood in this unique recipe. A fantastic pasta dish with pesto Genovese.

Ingredients: 2 servings

Peeled prawns
300-400 g
Avocado (cut into 1.5 cm cubes)
Mozzarella cheese (cut into 8 mm cubes)
100 g
Olive oil
2 tablespoons
Salt and pepper
to taste
White wine
4 tablespoons
Pesto Genovese (see Recipe ID: 1744825)
5-6 tablespoons
200 g


1. Heat the olive oil in a frying pan, add the prawns, season with salt and pepper and fry. Add the white wine.
2. Cook the pasta a minute before the pasta is ready, add the avocado to Step 1 and toss.
3. Add the cooked pasta, mozzarella and pesto Genovese to Step 2 and quickly toss. Season with salt and pepper, and it's done.
