My Husband Raves about This! Healty Stir-fried Ginger Pork with Onions

Some cuts of pork can dry out when cooked. Adding a lot of onion can solve that problem! This is a hearty and foolproof recipe because of the vegetables.

Ingredients: 2 servings

Pork (pork loin for ginger pork, coarsely chopped off cuts, shabu shabu pork, or whatever you like!)
200 to 250 g
Onion
1/2
For marinating the meat:
Sake
2 tablespoons
Soy sauce
1 teaspoon (or 1/3 tablespoon)
Grated ginger (tubed is OK)
15 g
Grated garlic
1 clove worth
Grated onion
1/2
Seasonings:
Sake, soy sauce, mirin
2 tablespoons

Steps

1. Marinate the pork with the marinade ingredients, and let rest for at least 30 minutes.
2. In the meantime, slice the onion 5 mm thick and put into a heatproof dish. Cover and microwave for 2 minutes. Combine the seasonings. (I added garlic to it in the photo.)
3. Stir fry the pork, marinade and all. When the meat changes color, add the onion and seasonings. Simmer for 5 minutes or so and it's done!
