Garbanzo Beans and Beet Salad

This salad highlights the sweetness of raw beet and the delicious flavor of the garbanzo beans.

Ingredients: 2 generous servings

Garbanzo beans (canned)
150 g or more
Your choice of nuts (such as cashew nuts, walnuts, etc.), crushed
as much as you like
Italian parsely (finely chopped)
a small amount
Extra virgin olive oil
2 tablespoons
Lemon or lime juice
1 tablespoon
Honey (optional)
1 teaspoon


1. Peel the beetroot and grate it.
2. In a large bowl, toss together all the ingredients, then it's ready.
3. Chill it in the refrigerator and serve.

I love beetroot, so I created this salad that features the sweetness of raw beet. I'm posting this for my records since it turned out delicious.
