Cod Meunière with Butter Ponzu Sauce

Cod Meunière with Butter Ponzu Sauce

Ponzu and butter go really well with cod.

Ingredients: 2 servings

2 pieces
Salt and pepper
a small amount
Cake flour
as needed
Olive oil
1 tablespoon
White wine (or sake)
2 tablespoons
4 tablespoons
Butter or margarine
2 tablespoons
Green onions (thinly sliced)
to garnish

1. Sprinkle salt and pepper on the cod. Dust with cake flour and shake to remove the excess.
2. Heat the olive oil in a frying pan. Add the fish from Step 1, skin side down. Cook until browned and flip.
3. Add the white wine to the frying pan from Step 2. Cover and let steam.
4. When the cod is cooked through, move it to a plate. Quickly wipe the frying pan. Add the ponzu and butter to the pan and bring to a boil.
5. Return the cod to the pan, coat with the sauce, and when they've become well seasoned, it's done.
6. Arrange on a dish. Top with the sauce and green onions and enjoy.

Story Behind this Recipe

Cod nabe (hot pot) goes well with butter ponzu, so I thought cod would go great with a meunière sauce, too.
