Put the chicken breasts into a resealable bag. Add soy sauce koji, honey, Chinese five spice powder and mix well. Remove the excess air from the bag and chill in the fridge overnight.
Place the chicken breasts in boiling water. Cook over a low heat for 5 to 8 minutes. When the chicken has boiled, check the seasoning. If necessary, add 1/2 teaspoon of salt.
Cover with a lid and let sit until cooled. Once cooled, chill in the fridge overnight.
Done Slice thinly and serve as they are. Use in salads or as a sandwich filling.

The key is to leave the chicken in the cooking liquid overnight after cooking Spend 2 whole days to make this. When you marinade the chicken, rub it in the bag with your hands. When you finish cooking the chicken ham, check the seasoning. Add 1/2 teaspoon of salt if it is necessary to sharpen the flavour. Honey adds a surprisingly great flavour to this ham.
