Carrot Cream Soup with Sweet New Harvest Onions

I made a carrot cream soup with plenty of fresh new onions. It will go down well even with those not keen on carrots !

Ingredients: 4-6 servings

Sweet new harvest onions
1 (350 g)
Carrot (medium size)
2 (250 g)
30 g
A pinch
200 ml
Consommé bouillon cube
250 ml
Fresh cream
50 ml


1. Cut the onions and carrots in half and slice thinly.
2. Melt the butter in a saucepan and sauté the onions and carrots. Add a pinch of salt. Fry until the onions are translucent.
3. Add the water and consommé bouillon cubes. When it comes to the boil, cover with a lid and simmer for 20-30 minutes.
4. Turn off the heat, and add the milk and fresh cream.
5. Mix in a blender or use a hand mixer until smooth. Warm it up before serving.
6. Garnish with parsley if you like.

Story Behind this Recipe

Even my daughter who doesn't eat much vegetables happily eats this up. Since it was the season for sweet new harvest onions, I used a generous quantity. It turned out rather well.
