Butter-free Shio-Koji Madeleines

This is a recipe for using up shio-koji! It uses vegetable oil, so it's healthy.

Ingredients: 4 pieces, 7.5 cm in diameter each

Cake flour
50 g
Baking powder
1 g
40 g
2 teaspoons
Vegetable oil
30 g


1. Combine the cake flour and baking powder and sift.
2. Crack the egg open into a bowl, add the sugar, and mix well.
3. Add the shio-koji and mix well.
4. Add the sifted dry ingredients and fold in with a rubber spatula until there are no flour streaks.
5. Add the vegetable oil and mix to incorporate.
6. Pour into cups and let rest for 30 minutes to 1 hour.
7. Bake in an oven preheated to 180℃ for 15 minutes.
