Vodka-Based Umeshu - Make Umeshu Abroad

Vodka-Based Umeshu - Make Umeshu Abroad

I live in Canada. Umeshu is hard to fine abroad, so I made it seeped in vodka.

Young green plums
500 g
Rock sugar
400 g
750 ml

1. I used rock sugar bought at a Chinese food specialty shop and 40 proof vodka.
2. The plums were sold as "young plums." I found them at a Middle Eastern food grocery.
3. Boil and dry your container to sterilize. Another way to sterilize is to put a little water in your container, and boil it for 30 seconds to 1 minute in the microwave.
4. Rinse the plums well and let sit in water for 2 to 3 hours, then pierce with holes.
5. If the stem remain, use a toothpick to remove them.
6. Add plums and rock sugar in layers, and then fill with vodka.
7. You can drink it after around 3 months, but after about half a year, it will mature and be ready to serve.

Story Behind this Recipe

By chance, I found some young plums, so I decided to make umeshu.
