Egg-Free! Fluffy! Tofu Pancakes!

These are safe for people with egg allergies because they don't contain any. This has the gentle flavor of tofu so it's extra delicious! The texture is fluffy, chewy, and moist!

Ingredients: Makes about 4 pancakes

○Tofu (Silken, but if unavailable, firm tofu is fine)
100 g
○Milk
180 ml
○Vanilla essence
a few drops
●Cake flour
150 g
●Baking powder
1 teaspoon
●Sugar
40 g

Steps

1. Mix all of the ● ingredients together with a whisk in circular motions.
2. Next, mix all of the ○ ingredients together. Keep mixing well until the batter is smooth.
3. Now mix all the dry ingredients from Step 1, into what you made in Step 2 and mix until only slightly lumpy.
4. Heat up some vegetable oil in a frying pan. Next place the heated frying pan on top of a damp cloth for three seconds and then return the frying pan to the burner.
5. Pour the dough into the frying pan in a circular motion, cover with a lid, and then cook on low heat. Once bubbles form on the surface, flip it over. Once puffy and fluffed up, they are done.
6. Cook the rest of the dough! Top with butter and maple syrup if you have it! This doesn't use any eggs but it's still really fluffy.

Story Behind this Recipe

I wanted to try making a tofu pancake myself since they have been so trendy as of late.
Ahh!! But I didn't have an egg! I tried making one anyway with what I had on hand, it turned out really delicious.
