○Tofu (Silken, but if unavailable, firm tofu is fine)

Mix all of the ● ingredients together with a whisk in circular motions.
Next, mix all of the ○ ingredients together. Keep mixing well until the batter is smooth.
Now mix all the dry ingredients from Step 1, into what you made in Step 2 and mix until only slightly lumpy.
Heat up some vegetable oil in a frying pan. Next place the heated frying pan on top of a damp cloth for three seconds and then return the frying pan to the burner.
Pour the dough into the frying pan in a circular motion, cover with a lid, and then cook on low heat. Once bubbles form on the surface, flip it over. Once puffy and fluffed up, they are done.
Cook the rest of the dough! Top with butter and maple syrup if you have it! This doesn't use any eggs but it's still really fluffy.
Story Behind this Recipe
I wanted to try making a tofu pancake myself since they have been so trendy as of late. Ahh!! But I didn't have an egg! I tried making one anyway with what I had on hand, it turned out really delicious.
Silken tofu is the best, but if you don't have it, then firm tofu is fine. Be careful not to over mix when you combine the dry and wet ingredients!! If you do, then they will turn out to be more like flat crepes!! When you are cooking them, you should let heated the frying pan rest on a damp cloth for three seconds. This makes them turn out much nicer.
