Fluffy Even with Rice Flour! Steamed Bread in a Microwave

Even though it's made with rice flour, it's fluffy rather than chewy!

Ingredients: 3 cups' worth

◎Rice flour
50 g
◎Skim milk powder
20 g
◎Baking powder
3 g
◎Soft light brown sugar
5 g
Water
55 g

Steps

1. Add the ◎ ingredients into a bowl, and mix with a whisk.
2. Add the water, and mix well. Since it's made with rice flour, the mixture won't get lumpy. The batter should be thick.
3. Put into cups, and microwave for 1.5 minutes at 600 W.
4. It's fluffy.

Story Behind this Recipe

I used to make steamed bread for my son who had allergies, but it was hard for him to eat when it was chewy. I wanted him to eat a fluffy one as if it was made with flour, and I arrive at this recipe after many experiments.
