The fettuccine will be boiled once more later so please only boil it until it is firm.
Add the bacon and minced garlic to a frying pan with some olive oil and stir-fry.
Add the canned tomatoes and continue to stir-fry.
Mix in the mascarpone cheese and keep stir-frying.
Adjust the flavour with salt and pepper. Then add a little sugar for a subtly sweet flavour. Adjust the thickness of the sauce with milk.
Add the boiled fettuccine to the sauce and mix together.
Stop the heat, transfer the pasta to a plate, and serve.
Story Behind this Recipe
I wanted to try making some pasta that I saw a chef make on TV at home. I gathered lots of tomato sauce recipes and after a bit of experimenting came up with this. It uses easy-to-find ingredients and easy-to-use amounts. My kids often ask for this so we eat it a lot at home.
You can make this with dried pasta but the sauce will mix better with fresh. You can use sliced bacon but bacon blocks would be more authentic for this recipe. I used Snow Brand's mascarpone. You can replace the milk with heavy cream and the sugar with honey if you'd prefer.
