Beef Steak, Chaliapin Style

The steak is marinated in grated onion, grilled, and then seasoned in onion sauce.
It's soft and delicious. The onion will cleanse your blood flow.

Ingredients: 3 servings

Beef rump steak
3 steaks
♦ Guérande Salt
1 pinch
♦ Pepper
♢ Grated onion
60 g
♢ Grated garlic
1 clove
Vegetable oil (for frying)
1 teaspoon and 1 teaspoon
Red pepper (small)
2, 110 g
Guérande Salt
a little
Sweet new harvest onion
150 g
10 g
▼ Soy Sauce
1.5 tablespoons
▼ Mirin
1.5 tablespoons
▼ Sake
2 tablespoons
Wasabi greens
1/2 bunch, 75 g


1. Sprinkle the ingredients marked with ♦ over the steak, and place in a plastic bag. Add the ingredients marked with ♢ and mix together, then seal the bag and let sit for 30 minutes. Mince the new onion.
2. Remove the stem and seeds from the red pepper, and cut into thin slices. Coat a skillet with oil, and lightly stir-fry the red peppers. Remove and sprinkle on salt.
3. Add 1 teaspoon of oil to the skillet, and cook the meat. Remove the meat once both sides have browned.
4. Add the butter and the other teaspoon of oil to the frying pan, and stir-fry the minced onion. Once the onions have browned, add the ▼ ingredients, and reduce by half.
5. Place the wasabi greens on a plate, and arrange the red peppers with them. Place the beef steaks on top, and cover with the sauce from Step 4.

Story Behind this Recipe

A Chaliapin Steak is a special steak made for the Russian musician Chaliapin at the Imperial Hotel in Japan. A minced onion sauce is drizzled over the rump or filet steak.
