Dan Dan Noodles with Rich Soup

I used miso and gochujang instead of tianmianjiang. You can make rich and delicious dan dan noodles using leftover milk.

Ingredients: 2 servings

Ground pork
200 g
Champon noodles (thick ramen-type noodles)
2 portions
Ingredients for meat miso
Salt and pepper
1 teaspoon
Miso (or tianmianjiang)
1 tablespoon
Gochujang (or doubanjiang)
1 tablespoon
Soy sauce
1 tablespoon
1 tablespoon
Grated garlic
1 teaspoon
Grated ginger
1 teaspoon
Sesame oil
1 teaspoon
Ingredients for soup
200 ml
200 ml
2 tablespoons
Sesame seeds
1 tablespoon
Fish powder
1 tablespoon
Toppings (green onion, mitsuba, etc)


1. Make the meat miso.
2. Mince the onion.
3. Add the ground pork and Step 2 onion into a non-stick frying pan, sprinkle with salt and pepper, and stir-fry.
4. Add all the remaining ingredients for the meat miso except for the salt and pepper to Step 3, and continue stir-frying.
5. Make the soup.
6. Pour in the water and shiro-dashi into a pot, and turn on the heat to high.
7. When it starts to boil, turn down the heat to low. Add the milk, sesame seeds, and fish powder to adjust the flavor.
8. Add in the champon noodles, and cook until they become your desired firmness. Serve into a bowl with the soup, and top with the meat miso.
9. Garnish with green onion and mitsuba, drizzle with ra-yu, and it's done.
