Fluffy Egg-Free Cocoa Cake

Fluffy Egg-Free Cocoa Cake

No eggs are used in this recipe, but it's fluffy. As there's only a little sugar, it may be suitable as a birthday cake for 1 and 2 year old babies or a celebration cake! I used a mold to cook the cake into the shape of a bear's face.

Ingredients: 1 mold

☆ Cake flour
200 g
☆ Sugar
30 g
☆ Cocoa powder
10 g
Vegetable oil
40 ml
200 ml
Baking soda
5 g
2 tablespoons
Silicone mold

1. Preheat the oven to 360°F/180°C. I used a silicone mold.
2. Mix the ☆ ingredients into a bowl with a whisk (it'll also help sieve the dry ingredients).
3. Add oil and milk, and cut the batter with a spatula.
4. Add baking soda and vinegar, and keep mixing.
5. Pour the batter into a mold, bake for 20 minutes in 360°F/180°C. Check doneness with a bamboo skewer. If it comes out dry, it's done.
6. Cool on a rack and wrap in plastic wrap.
7. Take the cake out of the mold, and it's done.
8. This was made with dinosaur mold. It's a bit sweet for kids. You can also add syrup or heavy cream. Adjust the amount of sugar to 80 g.

Story Behind this Recipe

I wanted to make a fluffy cake without eggs for my child, who has an egg allergy.
I asked my friend who's a cooking expert on the amount of baking soda to use.
