No eggs are used in this recipe, but it's fluffy. As there's only a little sugar, it may be suitable as a birthday cake for 1 and 2 year old babies or a celebration cake! I used a mold to cook the cake into the shape of a bear's face.
Preheat the oven to 360°F/180°C. I used a silicone mold.
Mix the ☆ ingredients into a bowl with a whisk (it'll also help sieve the dry ingredients).
Add oil and milk, and cut the batter with a spatula.
Add baking soda and vinegar, and keep mixing.
Pour the batter into a mold, bake for 20 minutes in 360°F/180°C. Check doneness with a bamboo skewer. If it comes out dry, it's done.
Cool on a rack and wrap in plastic wrap.
Take the cake out of the mold, and it's done.
This was made with dinosaur mold. It's a bit sweet for kids. You can also add syrup or heavy cream. Adjust the amount of sugar to 80 g.
Story Behind this Recipe
I wanted to make a fluffy cake without eggs for my child, who has an egg allergy. I asked my friend who's a cooking expert on the amount of baking soda to use.
I used a silicone mold, but you can use a cake pan. After adding baking soda and vinegar, the mixture will fizz, but don't worry. Once you add the ingredients, put in the oven quickly (within 10 minutes). After baking, the smell of the vinegar will disappear. As there's little sugar and oil content, it may be suitable for small children.
