Easy Homemade Fresh Pasta No. 9  (Trofie)

I love homemade pasta. This short pasta resembles bamboo shoots.


Your favorite pasta dough
Bread flour (or cake flour)
100 g
Olive oil
1 tablespoon
1/3 teaspoon
Water (to add a little at a time to desired consistency)
50-70 ml


1. Prepare the pasta dough. To reference a recipe for homemade dough preparation and various sauces, see (Recipe ID: 2140040).
2. Roll it out thinly and cut into small pieces.
3. Roll each piece of pasta with the palm of your hand.
4. Place a dull knife at a 45 degree angle, and pull the pasta towards you with the edge of the knife.
5. The dough should roll up on it's own. Repeat the process.
6. Instead of a knife, apparently there's a way to use your ring finger and pinky to shape the pasta.
7. I used the pasta in shrimp pescatore. The delicious sauce coats the chewy curls nicely!
