My Family's Recipe Corn Potage

This is a recipe for corn potage served at my house.

Ingredients: 4-5 servings

Corn kernels (frozen)
300 g
Onion (medium)
1
Butter
20 g
Water
200 ml
Consomme bouillon cube
2
Milk
300 ml
Heavy cream
100 ml
Salt
to taste

Steps

1. Put the butter in a pot and sweat the onions. Try not to burn it over medium heat.
2. Put the corn and saute.
3. Add 200 ml of water and consomme bouillon cubes, cover with a lid and boil it for about 20 minutes on low heat.
4. 20 minutes later, add 300 ml of milk and blend with a stick blender. You could also use a food processor.
5. Even if you try really hard to make it smooth, there will be some bits left over.
6. Strain the soup using a colander.
7. Transfer the soup back the pot, add heavy cream and heat. Fix the taste with salt.
8. You'll taste the sweetness of the corn.

Story Behind this Recipe

It's a frequent dish at my home as I have so much frozen corn from our garden.
