Chocolate Chip Banana Bread

This is a banana bread with chocolate chips.


Banana purée
Grand Marnier
1 tablespoon
Lemon juice
1 tablespoon
Cake flour
200 g
Granulated sugar
50 g
Brown sugar
80 g
Egg yolks
Unsalted butter (bring to room temperature for 30 minutes)
120 g
Sour cream
2 tablespoon
Cream cheese
3 tablespoon
Chocholate chips
1/2 cup (about 118 ml)
Cinnamon powder
as needed
Vanilla extract
a small amount
Baking powder
1 teaspoon
1/3 teaspoon
Egg whites
Granulated sugar
15 g
18 cm diameter cake mold
Melted butter
as needed (1 ~ 2 tablespoons)
Bread flour
for dusting the pan


1. Brush melted butter on the mold, and dust with bread flour.
2. Sift cake flour, baking powder, and salt in the same bowl.
3. Roughly chop the bananas into pieces, and preheat the oven for 180℃ (350℉).
4. Mash the bananas with a fork. Add Grand Marnier and lemon juice, then lightly mix to make purée.
5. Add unsalted butter, cream cheese, granulated sugar, and brown sugar, then cream together.
6. Beat egg yolks, then add little by little while mixing.
7. Add sour cream.
8. Add the Step 3 banana purée, and mix.
9. Add chocolate chips, cinnamon powder, and vanilla extract.
10. Make meringue with egg whites and 1 tablespoon of granulated sugar.
11. Add the sifted ingredients (cake flour, baking powder, and salt) from Step 2 to the ingredients in Step 9 into 3 batches, and mix with a cutting motion.
12. Then add the meringue from Step 10 into 3 batches, and mix with a cutting motion as well.
13. Pour the batter into the mold. Smooth and level with a spatula.
14. Bake on the middle rack in the oven at 180℃ (350℉) for 40 ~ 50 minutes.
15. Insert a skewer, and if it comes out clean, it's done.
