Wash the carrot and spinach and cut into easy-to-eat pieces. Place in a bowl while still hot, sprinkle with a little salt and cover with plastic wrap.
Cook the vegetables using the "Root Vegetable Course" setting. (In our microwave, it took a bit more than 3 minutes.) When it's cooled down a bit drain off any excess water, add the ● ingredients and mix.
Done. Try this in a bento.
Story Behind this Recipe
I wanted to make an easy recipe to go in a bento, so I used the carrot and spinach I had in the refrigerator. I always cook carrots without peeling them. I heard somewhere that there's a lot of nutrition in them right below the skin.
-Microwave cooking times vary depending on the type of microwave oven you have and the amount of vegetables cooked. Please watch the vegetables and adjust the cooking times.
-Be careful not to burn yourself when removing the plastic wrap - it'll be hot!
