Hanpen Fish Cake Sandwich with Chicken and Green Onions

Minced chicken, green onions, and cheese wrapped in fluffy hanpen fish cakes. I just can't get enough of the green onion texture.

Ingredients: 2 people

Hanpen
2
Ground chicken
200 g
Green onions (cut into small pieces)
2 stalks
Meltable sliced cheese
2 slices
Eggs
3
Vegetable oil (for frying)
as needed
☆Salt and pepper
a small amount
☆Soy sauce
1/2 teaspoon
☆Grated ginger in a tube
1/2 teaspoon

Steps

1. Place the minced chicken, green onions cut into small pieces, and ☆ into a bowl, and mix together.
2. Cut the hanpen into fourths, and cut it in half length-wise so you can make sandwiches. Put the mixture from Step 1 and the cheese in between, and coat with whisked egg.
3. Coat a frying pan with a fair amount of vegetable oil, and cook covered with a lid over a low~medium heat. Flip over once browned, brown the other side, and they are done.

Story Behind this Recipe

I had a bunch of leftover scraps of minced chicken and hanpen fishcakes, so I tried combining what I had in my fridge.
I got caught up on whether or not to fry these, but I decided to cook these up simply and healthily.
