Carrot Potage

A simple soup with the sweet taste of carrot. It's lightly seasoned with consomme soup stock.

Ingredients: 3 servings

Carrot
1 (150 g)
Onion
1 (100 g)
Water
300 ml
Milk
100 ml
Soup stock granules
1 teaspoon
Salt
1/4 teaspoon
Butter
10 g
Vegetable oil
1 tablespoon

Steps

1. Thinly slice the carrot and onion.
2. Heat butter and vegetable oil in a pan, and slowly fry the carrot and onion, making sure they don't burn.
3. Add the water, soup stock granules, salt and pepper, and cover with a lid. Simmer for around 15 minutes to soften the vegetables.
4. Whirl in a blender, then add milk, and bring to the boil to finish.

Story Behind this Recipe

I don't like soup with the strong taste of soup stock, so I came up with a recipe that highlights the flavour of the vegetables.
