Melting Okonomiyaki with Cabbage

Melting Okonomiyaki with Cabbage

It's melting & chewy even with nothing but cabbage.
Good as a single lunch.
Make a large portion, and enjoy with your family and friends.

Ingredients: 1 okonomiyaki

Cabbage
200 g (4 ~ 5 leaves)
Easy melting cheese
as required
Okonomiyaki sauce
as required
Mayonnaise
as required
Batter A
Cake flour
2 tablespoons
Katakuriko
1/2 tablespoon
Dashi stock granules
1/2 teaspoon
Water
3 tablespoons
Batter B
Cake flour
1 tablespoon
Dashi stock granules
1/2 teaspoon
Water
3 tablespoons
Japanese Worcestershire-style sauce
1 teaspoon

Steps

1. Julienne the cabbage. Rough or fine. Combine Batter A ingredients and Batter B ingredients in small separate bowls, and mix.
2. Pour the Batter A in a pan with oil. Sprinkle a handful of cheese on top.
3. Throw a lot of cabbage on top. You could add more cheese with the cabbage.
4. Pour Batter B slowly over the cabbage to fill the gaps.
5. When the bottom batter is cooked, flip it over! Don't hesitate! Even if the cabbage goes everywhere, you can just push it into the middle.
6. Leave it until the cabbage is soft like in the picture. When it's soft, transfer to a plate.
7. Spread the okonomiyaki sauce and mayonnaise, then done ♪ You can also add ichimi spice, aonori seaweed, and bonito flakes.
8. This is a cross-section of the dish. The cheese is melting like this.

Story Behind this Recipe

This is my favorite menu at a restaurant in my neighbourhood.
I tried to find a recipe but I failed. I arrived at this recipe after trying cooking many different recipes.

By the way, tomato & cheese okonomiyaki is super yummy at that restaurant.
