Rolled Omelette with Courgette and Sweetcorn

Rolled Omelette with Courgette and Sweetcorn

I tried putting courgette in rolled omelettes. It turned out lovely in colour but also quite tasty! I love cooking with ingredients that are in season.

Ingredients: 2 servings

Salt (for rubbing)
a pinch
☆ Eggs
☆ Sweetcorn (tinned)
2 tablespoons
☆ Mayonnaise
1 teaspoon
☆ Mirin
1 teaspoon
Vegetable oil (for frying)
As needed

1. Cut the courgette in half, then into 1 mm strips. Rub with salt and leave until soften.
2. Mix the ☆ingredients well. (Use mayonnaise first with the courgette to make it easier to combine.)
3. Coat the square omelet pan with vegetable oil, pour the egg mixture in 2 or 3 stages to fry into rolled omelet.
4. This is optional, but you can dip these in a tiny bit of soy sauce to highlight the natural sweetness of the eggs!
5. How about serving these with a bowl of miso soup filled with courgettes and spring onion in early summer (Recipe ID: 2058363)?

Story Behind this Recipe

When I first started posting recipes for Cookpad, I remember making a dish with courgette and sweetcorn, but I've since deleted it.
I always thought the combination of the two ingredients worked well, so when I found there was none on the web using these two with eggs, I posted this recipe again.
