Yakitori made in a Frying Pan

This goes perfectly with alcohol.


Chicken thigh meat
As desired
The white part of a Japanese leek
1 to 2 (thin)
Salt and pepper
To taste
Soy sauce, cooking sake, mirin
About 2 tablespoons each
Ichimi chilli powder
To taste
Vegetable oil
As needed


1. Cut the chicken thighs into bite-sized pieces and flavor with salt and pepper.
2. Cut the leek into 1 cm pieces and set aside.
3. Combine soy sauce, sake, and mirin in equal amounts of each and set aside. If you like a sweeter flavor, add sugar.
4. Skewer the chicken and leek in that order and cook in a frying pan with a little oil.
5. Once both sides have browned, reduce the heat and add the flavoring ingredients. Cook until you get the thick teriyaki flavor.
6. Transfer to a serving place and sprinkle ichimi chili powder if you like, and it's complete.

Story Behind this Recipe

I wanted to eat yakitori with alcohol! I had chicken thighs in the fridge so I made this on a whim. The clean-up after using the grill is a pain, so I made it easily in the frying pan and it worked.
