Red Sardines Simmered with Tomatoes

These sardines are soft to the bone, delicious, and smell-free. They are rich in umami!!

Ingredients: 5 sardines' worth

Canned tomatoes
400 g (240 g of tomato flesh)
Shimeji mushrooms
1 pack
Japanese leek (green part)
as needed
Garlic (finely chopped)
3 cloves
Bay leaf
White wine (if you don't have it, you can use Japanese sake or cooking sake)
50 ml
Soy sauce
3 tablespoons
2 tablespoons


1. Prepare the sardines. Cut them into 3~4 pieces each. Remove the entrails and wash the inside of the fish.
2. Put Step 1 into a pressure cooker with the sliced onions, shimeji mushrooms, Japanese leeks, and the remaining ingredients.
3. Like this.
4. Turn on the heat and once the pressure gauge is raised, turn to low heat and cook for 40 minutes. Turn off the heat and let sit as-is once the pressure is relieved.
5. It's done!
