Break the eggs to a bowl and beat. Add the seasonings to the bowl. Mix until the egg white has gone.
If you have plenty of time, it'd be better to strain the egg mixture with a strainer. Don't worry though, you don't have to do it if it's a bother.
Pour a little bit of vegetable oil into a egg fryer. Pour half amount of the egg mixture. Mix lightly.
Put the half cooked egg to the side. Heat-stable rubber spatula is convenient to do it.
Add the rest of egg mixture and roll up, and shape it.
Story Behind this Recipe
My family loves the taste of salty and sweet soy sauce. So the base is the same amounts of sake, soy sauce, mirin and sugar! The rolled omelette is also the taste of salty sweet soy sauce.
For myself or for my family, I put 1 teaspoon of soy sauce, and for my husband's lunch box, I put 2 teaspoons of soy sauce. Adjust the amount of seasoning as you like. Strain the egg if you have enough time (in the process 2).
