Tip 1: Boil water in a pot and put the mackerel. Turn the heat off immediately and drain in a colander.
Tip 2: Heat a pot with water, sake, sugar and ginger over high heat. Add the mackerel. Turn down the heat to medium, cover with a lid and simmer for 5 minutes.
Tip 3: Add miso and mirin and cover with a lid. Simmer for 10 minutes on medium heat.
Turn up the heat a little higher. Remove the lid and keep simmering.
Story Behind this Recipe
Follow these three tips and you'll have a scrumptious dish that'll be loved by all.
Tip 1. Pour hot water on the fish. It's an extra step, but it helps remove the odor and drains it. Tip 2. Add the fish once the sauce has come to a boil. Tip 3. Simmer in a short time. It avoids the filet from flaking and also prevents from becoming hard. I sliced one mackerel into 2, and cut them half.
