Crispy Cocoa & Chocolate Cookies

Chunks of chocolate bar in a slightly bitter cookie. Try chilling the cookies before you eat!

Ingredients: 15 cookies

Unsalted butter
80 g
White sugar
4 tablespoons
Cake flour
150 g
Cocoa powder
4 tablespoons
Baking powder
1/2 teaspoon
Dark chocolate bar
1 (70 g)

1. Sift the cake flour, cocoa powder, and baking powder together.
2. Break the chocolate bar into about 2 cm squares.
3. Place room temperature butter in a bowl. Add the white sugar and stir until the mixture becomes white. Add the beaten egg, a little at the time, and mix well.
4. Now add Steps 1 and 2 in order to the butter mixture and combine with a rubber spatula. The mixture will be firm, but mix well until the flour disappears.
5. Line a baking tray with parchment paper and then use a spoon to scoop on the mixture. Bake in preheated oven at 170℃ for 20 minutes.

Story Behind this Recipe

I was re-arranging my Praline Cookie recipe. I ran out of chocolate chips, so I used a chocolate bar instead. Chunks of chocolate gave these cookies a nice texture and I thought it actually better than the original recipe.
