String the peas. Dig your nails into the end of the peas, and pull up the strings.
Break off the stems with your nails, and pull down the strings on the other side.
Briefly boil the sugar snap peas in boiling water. If you cook them too long, they will lose their nice colour!
Put them in a sieve, and transfer into a bowl. Mix in the olive oil and grated cheese. The saltiness of the cheese varies so add the salt to suit your taste.
Story Behind this Recipe
I tried replicating a similar dish that I had at a restaurant, which is famous for its delicious vegetable side dishes.
When you are using mild grated cheese, the dish will need more salt. When you are using salty cheese, you don't need to add salt later! Olive oil helps the cheese to be incorporated in the dish better, but you don't have to add it!
