Roughly chop the strawberries or keep them whole. Put the strawberries and the sugar in a pot and let sit for over 15 minutes.
Turn on the heat. When it starts to boil, simmer for approximately 15 minutes, taking care not to let it burn. Lastly, add the lemon juice and turn off the heat. This photo shows the strawberries right after the heat has been turned off.

Story Behind this Recipe
I make this every year but decided to upload a simple version for beginners.
Remove any scum that surfaces during the process. Adjust the heat as needed to prevent burning and boiling over. If you're going to be making this as a sauce (for yogurt), decrease the sugar to 30% of the weight of the strawberries.
