Start cooking the penne for 9 minutes. You can start Step 2 when half of the cooking time has past.
Pour the soy milk into a saucepan. Break up the baby cheese and add to the pan, and slowly melt it over low heat.
When the penne has boiled, add to the saucepan. Add the mayonnaise, salt and pepper, mix together quickly over medium heat to thicken the sauce. Then it's done.
Serve on a plate, sprinkle with black pepper to finish.
Story Behind this Recipe
I wanted to eat gorgonzola penne, but it's not a type of cheese I normally have in my fridge. So, I wouldn't say it's just like "penne alla gorgonzola”, but I made this using mayonnaise, my secret ingredient. It always works when I need something to add to a dish.
Even if the cheese hasn't melted completely, it will melt very quickly when you add the boiled penne. So don't worry!
