Cut the broccoli into small pieces and boil or microwave.
Mince the garlic. Fry in a pan with a generous amount of olive oil and add the red chili pepper.
*Cook over low heat until almost browned.
Add the prawns and when thoroughly cooked, add the salt and pepper.
*It will be tossed with broccoli later so flavour it more the usual.
Put the prawns and olive oil in a bowl with the broccoli and toss. Chill in the fridge.
Story Behind this Recipe
I bought a tasty broccoli and prawn red chili salad at the department and wanted to recreate it. The simple salt taste brings out the umami from the prawns. Using Krazy Salt (seasoned salt) will give it a more authentic taste. I also recommend adding boiled snap peas!
Add a generous amount of olive oil (3 or more tablespoons). Heat the garlic slowly over low heat so the aroma carries to the oil. Don't burn it! You can use chili peppers or ichimi togarashi (Japanese red chilli pepper) instead of red pepper. Toss an hour or so before eating to allow the flavours to blend. Add frozen seafood mix for more extravagance!
