Easy♡Tomato Soup (Minestrone)

It's an easy minestrone, a rich and thick version.

Ingredients: 4 servings

Wiener sausages
4~5
Potatoes (medium)

Carrot
1/2
Onion (medium)
1/2
Garlic, minced
1 clove
Olive oil
1 tablespoon
Water
400 ml
✩Consomme stock cubes
2
✩Herb salt
1 teaspoon
✩Sugar
1 tablespoon
✩Black pepper
as needed
✩Bay leaf

Canned tomato (diced)
1 can

Steps

1. Cut the vegetables into 1 cm dice. Slice the sausage to 5 mm.
2. Heat olive oil in a pot and add garlic. Add the vegetables and cook for a few minutes.
3. Add water and ✩ ingredients and simmer for about 10 minutes.
4. Add the canned tomato and bring to a boil. Reduce the heat to low and simmer for another 20 minutes.
5. When it's thickened, it's done.♪
6. If you have leftovers, reduce the soup and pour over scrambled eggs.
