Crispy Cucumber Salad with Sesame Mayo and Ponzu

The crispy salted cucumber is truly exquisite!
With lots of sesame, this salad is good for beauty.
It's also great for using up leftover cucumber.

Ingredients: 4 servings

about 1/2 teaspoon
2 plus
★ Ground sesame seeds
4 tablespoons
★ Mayonnaise
2 tablespoons
★ Ponzu
1 tablespoon
★ Sugar
1 teaspoon


1. Thinly slice the cucumbers into rounds with a mandoline or a knife. Put into a plastic bag, sprinkle in some salt, and rub in through the plastic bag.
2. Discard the moisture that comes out of the cucumber, wash under running water and squeeze. Thinly slice the chikuwa.
3. Mix all the listed ingredients together, and it's done.

Story Behind this Recipe

This is a cucumber version of my popular "Easy Spinach and Chikuwa with Mayonnaise and Ponzu" (Recipe ID: 2036919).
I tried adding more ground sesame seeds to increase the flavour.
My 1-year-old son won't eat fresh vegetables, but he loves this and eats it all up.
