Peel the potato and cut into 6 pieces. Bring some water to a boil and add the eggs. Once they're about 70% cooked add the sausage and boil for 1 minute.
Check the firmness of the boiled items, and if they're okay, then drain them. Peel the egg and use the back of a fork, etc to mash it. Mash the potato as well.
Cut the sausage into small, bite-sized pieces. Mix together with mayonnaise, salt and pepper, and lemon juice, and adjust the flavor.
Arrange into a round shape on a small plate. Decorate with a carrot sliced into a heart shape using a mold and large radish sprouts and it's complete.
For bento, put the potato salad in a silicone or aluminium cup, then place the heart on top. It's cute.

I tried putting this together for something simple yet nice-looking for welcoming guests. Maybe it was the color scheme, but it was far more well-received than I anticipated. This even worked for Valentine's Day.
Before boiling the egg if you use the back of a spoon, etc., to lightly crack the large, rounded part of the shell it'll be easier to peel it off later. Use as much mayonnaise and lemon juice as you like. There are no watery vegetables, so this is perfect as a bento lunch box item.
