My Go-To Dish Sweet & Sour Chicken for Chicken Lovers

Our family is firmly in the chicken camp, so this is a chicken version of sweet and sour pork. Of course, you can also make this using pork.

Ingredients: 3 servings

Chicken thigh meat
200g
For the marinade:
Sake
1 tablespoon
Ginger (grated)
about 1/2 teaspoon
Garlic (grated)
about 1/2 teaspoon
Soy sauce
2/3 tablespoon
Salt and pepper
to taste
Katakuriko
to taste
Carrot
1/3
Onion
1/2
Shitake mushrooms

Bamboo shoot (cooked and preserved in water)
50 g
Green peppers

Oil for cooking, frying
as needed
For the sweet vinegar sauce:
Sugar
3 tablespoons
Rice vinegar
3 tablespoons
Soy sauce
1 tablespoon
Oyster sauce
1 tablespoon
Sake
1 tablespoon
Chinese chicken stock powder
1/2 teaspoon
Water
100ml
Katakuriko
1 tablespoon

Steps

1. Combine all of the ingredients for the sweet vinegar sauce.
2. Add the sweet vinegar sauce. Mix well before marinating, since the katakuriko will settle. Mix everything together well.
3. While marinating, cook the vegetables, starting with the root vegetables.
4. Once the vegetables have cooked, add the fried chicken.
5. Add the sweet vinegar sauce, mixing well before adding. Mix everything together well.
6. It's ready to serve.

Story Behind this Recipe

Since my son loves karaage, and I'm a big fan of sweet and sour pork, this was a compromise that became our family's go-to dish.
I played around with the seasoning. Sometime I'll get around to making a regular recipe.
