Strawberry Milk Mini Cakes for Cherry Blossom Viewing

Enjoy the texture of white chocolate inside of the cakes together with the gentle flavor of strawberry.

Ingredients: 32 pieces, each 3 cm large

Pancake mix
100 g
Strawberry powder
8 g or as you like
1/2 (25 g)
20 g
70 ml
15 g
White chocolate chips or chopped chocolate
about 25 g
Vegetable oil for spreading on the molds
as needed


1. Spread the vegetable oil into the petite gateau molds, put 3 pieces of white chocolate chips into each cup.
2. Put the pancake mix, strawberry powder, egg, sugar and milk into a bowl to whip with a whisk.
3. Put the butter into a heat proof container. Microwave for 30 seconds at 600 W to melt then mix into the bowl.
4. Stir in the rest of white chocolate chips.
5. Spoon the batter into molds.
6. The batter will rise while baking, so only fill the batter up to 2/3 full.
7. Tap the molds from Step 5 against the counter to rid of trapped air bubbles and smooth out the tops.
8. Bake for about 15 minutes in the preheated oven at 170℃.

Story Behind this Recipe

I had strawberry powder and white chocolate chips which I got in a 100 yen shop, so I baked mini cakes with the amount that you can use up.
