Salty-Sweet Miso Flavoured Pork Offcuts Stir-Fry

I recreated the meat-miso taste which was the most popular school lunch item. I used pork offcuts in this recipe. Great for dinner, lunch or bento. You can also rearrange this dish to make miso ginger pork.

Ingredients: about 3 servings

Thinly sliced pork offcuts or pork offcuts
300 g
★Miso, mirin, sake
2 tablespoons each
2 ~ 3 teaspoons
★Vinegar, soy sauce, sesame oil
2 teaspoons each
a small amount
(★Grated ginger)
2 teaspoons (5 cm if using from a tube) ※Step 6
For serving
Mayonnaise if you like
to your liking


1. Chop the meat into your preferred size.
2. Put ★ ingredients and the meat in a bowl. Rub the meat so that it absorbs the sauce.
3. Spread it in a non-stick pan, and turn on the heat.
4. Stir-fry until it's cooked through. Serve on a plate and it's done. It easily burns, so adjust the heat accordingly.
5. I used red miso paste in this picture. The color is dark, but it's ok. It's rich and delicious.
6. If you add ginger, it will become a miso-ginger pork.
7. For those who like a sweet taste, or for kids, increase the amount of sugar to 3 teaspoons.

Story Behind this Recipe

I heard that heating the meat slowly makes it tender, so I tried that method.
I remembered the taste of meat-miso from school lunch, so I flavored this dish with miso.
