Simply Seasoned Asian Sweet Potato Potage

This soup is really delicious, even though salt is the only seasoning. It highlights the natural flavor of the sweet potato.
You don't need to use a blender, so it's easy to clean up afterwards too.

Ingredients: 2-4 servings

Asian sweet potato
Soy milk
400 ml
400 ml
small amount


1. Wash and peel the sweet potato. Cut into bite-size pieces and cook, either by boiling or in a microwave.
2. When the sweet potato is soft, mash with a potato masher.
3. In a pot, add water, soy milk and mashed sweet potato and bring to a simmer. Season with salt.

Story Behind this Recipe

When making potage for my children when they were very young, I would only season it with salt. I actually preferred it to the way it tastes when made with stock and other seasonings, so I've been making it with just salt ever since.
