Cherry Blossom Viewing Bento - Meatballs (Sakura Colored)

Cherry Blossom Viewing Bento - Meatballs (Sakura Colored)

Just by adding these, your cherry blossom viewing bento will be that much more spring-like. Since you don't use mochi rice, the fat of the meat will coat it in a nice round shape.

Ingredients: 4 servings

Ground pork
300 g
Onions (finely chopped)
1/2 an onion
Soy sauce
1 tablespoon
Chinese chicken stock powder
1 teaspoon
Salt and pepper
a small amount
Ginger (tube type)
3 cm
Garlic (tube type)
0.5 cm
Leek or Chinese chives (minced)
100 g
Rice (mochi rice if available)
100 g
Red food coloring
a small amount
Soy sauce and Japanese mustard
a small amount

1. Dissolve the red food coloring with some water until it turns to sakura color. Mix together with the rice.
2. Mix the ground pork with all the ingredients except for the rice and food coloring.
3. Roll the meat into 2~3 cm balls and coat with the sakura-colored rice.
4. Steam in a steamer for about 15 minutes. Line the bottom with parchment paper.
5. Put the soy sauce and Japanese mustard in the bento box and use on the meatballs just before eating.

Story Behind this Recipe

While thinking, "Can I make this without mochi rice?" I made this. We rarely use mochi rice in our house.
