Spinach and Aburaage Miso Soup

Spinach and aburaage go really well together.
This is really delicious!

Ingredients: 3 servings

2 bunches
2 tablespoons plus
600 ml
★Bonito dashi stock granules
1 teaspoon


1. Wash the spinach and slice into 3 cm-wide pieces. Loosely wrap, and microwave for 1 minute at 600 W. Soak in cold water and then squeeze out the moisture.
2. Pour hot water on the aburaage to remove excess oil, and slice vertically into thin strips.
3. Heat the ingredients marked ★ in a saucepan. When it has come to the boil, add the aburaage, and simmer for 1 - 2 minutes.
4. Turn off the heat and dissolve the miso. Turn the heat back on, add the spinach, and bring to a gentle simmer to finish.
