Cheesy French Toast with Koya Tofu (Low-Carb)

Cheesy French Toast with Koya Tofu (Low-Carb)

This springy french toast made with koya tofu is almost like bread pudding. The sweet and salty dish is delicious.

Ingredients: 2 slices

Koya tofu
2 blocks
★Soy milk or milk
★Artificial sweetener (or sugar or other sweetener)
1 tablespoon
★Rum or vanilla essence
a small amount
Butter for cooking
1 slice
Grated cheese or salt
a small amount
Whipped cream, etc.

1. Poke holes into the koya tofu before reconstituting. Make sure you poke the holes deep so that the egg mixture can penetrate through.
2. Combine all of the ★ ingredients together. Cover the tofu with the mixture and let sit for at least 30 minutes. This is how it looks after soaking in the mixture overnight.
3. Melt the butter in the frying pan. Cook one side on very low heat.
4. Once browned and crisp, flip over and cook the other side. Sprinkle with grated cheese or salt for a delicious sweet and salty finish!!
5. If the koya tofu is quite large and there isn't enough egg mixture, adjust the amount with soy milk.

Story Behind this Recipe

I felt like eating some sweet and salty french toast, and when I made it with grated cheese, it was a huge success (a low sugar recipe).
