This springy french toast made with koya tofu is almost like bread pudding. The sweet and salty dish is delicious.

You could re-hydrate the tofu and the egg mixture would soak through to the center easily, but leaving them dried creates a better texture.Cook on very low heat and don't move them around the pan until browned and crisp. You will be amazed at how chewy these turn out.
