Honey Lemon Yogurt Baked Donuts

Honey Lemon Yogurt Baked Donuts

These are refreshing donuts full of lemon & yogurt! The glossy glaze uses lemon juice, so it's deliciously sweet and sour!

Ingredients: 24 5cm donuts

Pancake mix
200g (1 bag)
2 tablespoons
Yogurt (unsweetened)
80 g
Lemon juice
1 tablespoon
Grated lemon zest (just the yellow part)
1 tablespoon (1 lemon worth)
Unsalted butter (or unsalted margarine)
50 g
Icing sugar (powdered sugar)
6 tablespoons
Lemon juice
2 tablespoons

1. In a bowl, beat the egg with a whisk.
2. Add the honey, lemon juice, and lemon zest and mix.
3. Add the yogurt and mix.
4. Add the pancake mix and mix until no longer powdery.
5. It's ready when the ingredients are thoroughly combined.
6. Melt the butter in the microwave at 600W for 40 seconds. Add to Step 5 and mix well.
7. When it becomes glossy and soft, the batter is done.
8. Set the donut pan into the Vitantonio (donut maker) and lightly coat with butter. After preheating, fill the donut molds with the batter and bake for 5 minutes.
9. They will look like this after 5 minutes of baking. Adjust the baking time to get the color you want.
10. Remove the donuts from the pan and use kitchen scissors to cut off any excess dough. Let cool.
11. Mix the glaze ingredients in a bowl with a spoon.
12. Glaze the tops of the cooled donuts.
13. Let the donuts rest on kitchen parchment paper until the glaze has dried.
14. Once the glaze has dried, it will become translucent and opaque.

Story Behind this Recipe

I love donuts with lots of glaze!
To make it not just sweet, I added the refreshingly sour flavor of lemon and yogurt.
