Easy Chocolate Banana Muffins with Pancake Mix (no extra butter or sugar)

These are quick and easy muffins made with pancake mix. There's no need for extra butter and sugar so they're very easy to make. They're great as a snack for kids or to distribute as presents.

Ingredients: About 10 muffin cups (about 7 cm in diameter x 4 cm in height)

Ripe bananas
Vegetable oil
1/2 cup (100 ml)
Pancake mix
200 g
Chocolate bar
*Almond slices (optional)
about 1 tablespoons


1. Add one banana into a bowl, and mash using a masher or the back of a spoon.
2. Add the vegetable oil and egg, and mix well with a whisk.
3. Add pancake mix, and mix some more. Preheat the oven to 180℃.
4. Chop the remaining banana into pieces with a knife.
5. Add the Step 4 banana to Step 3. Break the chocolate bar into small pieces, and add to the bowl. Fold in with a spatula.
6. Fill the cups with the Step 5 batter to about 80% full, and place on a baking sheet. *Sprinkle on almond slices on top if you like.
7. Bake in the oven preheated to 180℃ for about 20 minutes.
8. Check to see if they're fully baked through with a bamboo skewer. If they go through without any uncooked batter sticking to them, they're done!
9. *If you remove the muffin from the looks like this. You can wrap them as is for a present, and it will be cute.

Story Behind this Recipe

I had leftover ripe bananas... so I put them in the batter and made muffins.
These will definitely go well with chocolate!
I broke a chocolate bar and dropped them in the batter. I had these for breakfast today!
