Add one banana into a bowl, and mash using a masher or the back of a spoon.
Add the vegetable oil and egg, and mix well with a whisk.
Add pancake mix, and mix some more. Preheat the oven to 180℃.
Chop the remaining banana into pieces with a knife.
Add the Step 4 banana to Step 3. Break the chocolate bar into small pieces, and add to the bowl. Fold in with a spatula.
Fill the cups with the Step 5 batter to about 80% full, and place on a baking sheet. *Sprinkle on almond slices on top if you like.
Bake in the oven preheated to 180℃ for about 20 minutes.
Check to see if they're fully baked through with a bamboo skewer. If they go through without any uncooked batter sticking to them, they're done!
*If you remove the muffin from the cup...it looks like this. You can wrap them as is for a present, and it will be cute.
Story Behind this Recipe
I had leftover ripe bananas... so I put them in the batter and made muffins. These will definitely go well with chocolate! I broke a chocolate bar and dropped them in the batter. I had these for breakfast today!
-Please make sure you use ripe bananas. -Since the muffins don't contain sugar, they are not that sweet.
