Sweet Potato Cookies

These cookies are made without butter. They're low in sugar too, so are perfect if you're on a diet.
Enjoy the simple flavor of sweet potatoes.

Ingredients: Makes 35 cookies

Sweet potato
180 g
30 g
Cake flour
100 g
Baking powder
1/2 teaspoon
Vegetable oil
50 ml
Black sesame seeds
1 tablespoon


1. Put the sweet potato in a silicon steamer and microwave until tender. While still hot, scoop out the flesh, add sugar, and pass through a sieve to strain.
2. Combine cake flour and baking powder in a bowl, and whisk until smooth and fluffy.
3. Add strained sweet potato and vegetable oil to the dry ingredients and mix.
4. Once the batter forms a dough, wrap in plastic wrap and chill in the refrigerator for 20 minutes.
5. Roll out the dough to 5 mm thickness, then cut with a cookie cutter. Sprinkle black sesame seeds and bake for 15 minutes in an oven set to 360°F/180°C.

For non-dieters, substitute butter for vegetable oil. They're even more delicious that way.
